We have used these compotes in so many ways in our shop from pastries to elaborate wedding desserts and everything in between. They are ALWAYS met with much gratitude and satisfaction. Our compotes are tried and among all people, from executive chef to everyday customer, the consensus seems to be the same: “YUM!!”
Compote is quite simply the forerunner to modern day jams and sauces. The Old World method was simply to “reduce to thicken” not to make it set as we do today with pectin or other gelling agents. We love this method because it most accentuates the naturally occurring flavours and allows them to be developed in a way that you simply can’t achieve any other way. These compotes are very natural, intensely- flavoured sauces and we hope you find your favourite ways to use and enjoy them!
